These potatoes are crisp on the outside and soft in the middle. The thin slices help the butter and herbs sink into every layer. They cook fast in the air fryer and need only a few simple ingredients.

Ingredients
  

  • 4 medium Yukon Gold or Russet potatoes
  • 3 tbsp melted butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish optional

Equipment

  • Air fryer
  • Sharp knife
  • Cutting board
  • Wooden spoons or chopsticks
  • Pastry brush
  • Small bowl

Method
 

  1. Wash and dry the potatoes.
  2. Place wooden spoons or chopsticks on each side of the potato.
  3. Cut thin slices across the top without cutting through the base.
  4. Mix the melted butter, olive oil, garlic, salt, and pepper.
  5. Brush the mix over the potatoes and inside the slices.
  6. Preheat the air fryer to 375°F.
  7. Place the potatoes in a single layer.
  8. Cook for 15 minutes.
  9. Brush again with the butter mix.
  10. Cook 10 to 12 more minutes until crisp and tender.

Notes

  • Soak the potatoes in cold water for 10 minutes for extra crisp edges.
  • Dry well before brushing with fat.
  • Use small or medium potatoes so they cook evenly.
  • Add parmesan near the end for a golden crust.
  • Brush again halfway for richer flavor.
