Method
- Wash and dry the potatoes.
- Place wooden spoons or chopsticks on each side of the potato.
- Cut thin slices across the top without cutting through the base.
- Mix the melted butter, olive oil, garlic, salt, and pepper.
- Brush the mix over the potatoes and inside the slices.
- Preheat the air fryer to 375°F.
- Place the potatoes in a single layer.
- Cook for 15 minutes.
- Brush again with the butter mix.
- Cook 10 to 12 more minutes until crisp and tender.
Notes
- Soak the potatoes in cold water for 10 minutes for extra crisp edges.
- Dry well before brushing with fat.
- Use small or medium potatoes so they cook evenly.
- Add parmesan near the end for a golden crust.
- Brush again halfway for richer flavor.
