Ingredients
  

  • For the Muffins:
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples about 1 medium apple
  • For the Streusel Topping:
  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter cold, cut into small pieces

Method
 

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Prepare wet ingredients: In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in apples: Gently fold in chopped apples, ensuring they’re evenly distributed throughout the batter.
  6. Make the streusel: In a small bowl, mix flour, brown sugar, and cinnamon. Add cold butter and use a pastry blender or your fingers to cut the butter into the dry ingredients until crumbly.
  7. Fill muffin pan: Divide the batter evenly among the muffin cups and top each with a generous sprinkle of streusel.
  8. Bake for 18-22 minutes or until a skewer inserted into the center of a muffin comes out clean.
  9. Cool and serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
