Ingredients
  

  • 5 strips bacon chopped
  • 1 lb lean ground beef
  • 4 tbsp butter
  • ½ onion chopped
  • 2 ribs celery chopped
  • 2 carrots chopped
  • 1 tbsp minced garlic 3 cloves
  • cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp mustard
  • 1 lb Russet potatoes diced
  • 2 cups cheddar cheese shredded
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Cook bacon until crispy, remove, and set aside.
  2. Brown beef, drain, and remove from pot.
  3. Sauté onion, celery, and carrots in butter until softened. Add garlic.
  4. Stir in flour, then slowly whisk in broth.
  5. Add cream, mustard, potatoes, and beef. Simmer 15 minutes until potatoes are tender.
  6. Stir in cheese and lemon juice. Season with salt and pepper.
  7. Top with bacon before serving.

Notes

  • For extra flavor, swap half the cheddar with smoked gouda.
  • To lighten, use ground turkey and half-and-half.
  • Soup thickens as it cools — add broth when reheating.
