Chinese Beef and Broccoli

Chinese Beef and Broccoli is a savory and satisfying dish that's quick to make and bursting with flavor. The recipe uses a tenderizing technique called velveting to create juicy, melt-in-your-mouth beef. Ingredients
  

  • 1 lb flank steak or sirloin thinly sliced
  • 2 cups broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp rice wine or dry sherry
  • 1 tsp cornstarch
  • ½ tsp baking soda
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tbsp sesame oil
  • ½ cup water
  • 2 tbsp cornstarch mixed with ¼ cup cold water

Method
 

  1. Marinate the beef with soy sauce, cornstarch, baking soda, and rice wine. Let sit for 30 minutes.
  2. Prepare the stir-fry sauce by mixing soy sauce, oyster sauce, sesame oil, and water in a small bowl.
  3. Cook the broccoli in a hot pan for 2-3 minutes, then set aside.
  4. Stir-fry the beef in hot oil for 2-3 minutes until cooked.
  5. Add garlic and ginger, stir for 30 seconds.
  6. Add the stir-fry sauce and bring to a simmer. Thicken with the cornstarch-water mixture.
  7. Combine beef, broccoli, and serve over rice.

Notes

  • Tip for Tender Beef: For the best texture, slice the beef thinly against the grain and marinate it for at least 30 minutes. You can even marinate it up to 12 hours for a deeper flavor.
  • Cooking the Broccoli: Make sure not to overcook the broccoli. It should remain bright green and slightly crisp for the best texture in the stir-fry.
  • Customizable: Feel free to add other vegetables like bell peppers, carrots, or snow peas. Just adjust the cooking time based on the type and size of vegetables you add.
