Ingredients
  

  • Cinnamon Roll Filling:
  • 1/2 cup 110g Light Brown Sugar
  • 5 tbsp 70g Unsalted Butter, softened
  • 1 tbsp Ground Cinnamon
  • Pinch of Salt
  • Cinnamon Sugar Topping:
  • 1/4 cup 50g Granulated White Sugar
  • 1/2 tsp Ground Cinnamon
  • Cookie Dough:
  • 2 cups 250g All-Purpose Flour, spooned & leveled
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 3/4 tsp Cream of Tartar
  • 3/4 cup 168g Unsalted Butter, softened
  • 3/4 cup 165g Light Brown Sugar, packed
  • 1/4 cup 50g Granulated White Sugar
  • 2 Egg Yolks room temperature
  • 1 tbsp Vanilla Extract
  • Cream Cheese Icing:
  • 2 oz 56g Cream Cheese, cold
  • 1 cup 135g Powdered Sugar
  • 2 tbsp 30ml Whole Milk

Method
 

  1. Make the Filling: In a medium bowl, mix butter, brown sugar, cinnamon, and salt with an electric mixer until fluffy (3-5 minutes).
  2. Prepare the Topping: Combine white sugar and cinnamon in a small bowl; set aside.
  3. Mix the Dough: Preheat oven to 350°F (175°C). Whisk together flour, baking powder, soda, salt, and cream of tartar in a medium bowl. In a large bowl, beat butter, brown sugar, and white sugar until fluffy. Add egg yolks and vanilla, mix well. Gradually add dry ingredients and combine.
  4. Incorporate the Filling: Divide dough into thirds. Sprinkle one-third of the filling on each portion and fold it in, keeping swirls intact.
  5. Form Cookies: Scoop dough into balls, roll in cinnamon sugar, and place on parchment-lined baking sheets.
  6. Bake: Bake for 8-10 minutes until edges are golden and centers are soft.
  7. Make the Icing: Beat cream cheese until smooth. Gradually add powdered sugar and milk until the icing is creamy.
  8. Drizzle the Icing: Once cookies are cool, drizzle with cream cheese icing.
