Ingredients

  • ½ cup peanut butter creamy
  • ½ cup softened butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • For the Filling
  • 24 mini peanut butter cups unwrapped

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Beat peanut butter, butter, brown sugar, and white sugar until creamy.
  3. Add egg and vanilla. Mix again.
  4. Add flour, baking soda, and salt. Mix until dough forms.
  5. Scoop dough into balls and place in a mini muffin tin.
  6. Bake 8–10 minutes until lightly golden.
  7. Press a mini peanut butter cup into each cookie while warm.
  8. Cool 10 minutes before removing from the pan.

Notes

  • Use creamy peanut butter for best texture.
  • Let cookies cool before removing to prevent breaking.
  • Add chocolate drizzle for decoration.
