Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach or 1 cup thawed frozen spinach, squeezed dry
  • 2 cloves garlic minced
  • 2 tbsp olive oil divided
  • 2 oz cream cheese softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tsp lemon juice
  • Toothpicks or kitchen twine for securing

Method
 

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Butterfly each chicken breast by slicing horizontally, creating a pocket.
  3. Step 3: Season chicken on both sides with garlic powder, smoked paprika, salt, and pepper.
  4. Step 4: In a skillet, heat ½ tbsp olive oil over medium heat. Add garlic and spinach; cook 2 minutes until wilted.
  5. Step 5: Remove from heat and stir in cream cheese, mozzarella, Parmesan, Italian seasoning, and lemon juice until creamy.
  6. Step 6: Stuff each chicken breast with the spinach mixture. Secure with toothpicks.
  7. Step 7: In an oven-safe pan, heat remaining olive oil. Sear chicken 3–4 minutes per side until golden.
  8. Step 8: Transfer skillet to oven; bake 20–25 minutes or until internal temperature reaches 165°F (74°C).
  9. Step 9: Rest 5 minutes before serving. Slice and enjoy warm.
