  • - 4 boneless skinless chicken breasts (1.5 lbs)
  • - 1/2 cup sweet chili sauce store-bought or homemade
  • - 4 cloves garlic minced
  • - 1 tbsp fresh ginger grated
  • - Juice from 2 limes
  • - Salt and pepper to taste
  • - Fresh cilantro chopped (for garnish)
  • - 1 tbsp olive oil for cooking

Method
 

  1. **Prepare the Marinade:** In a bowl, combine the sweet chili sauce, garlic, ginger, lime juice, salt, and pepper. Stir until well mixed.
  2. **Marinate the Chicken:** Place the chicken breasts in the marinade and coat evenly. Let it marinate for at least 30 minutes (or up to 1 hour for more flavor).
  3. **Cook the Chicken:**
  4. - Preheat a skillet or grill over medium-high heat and add a little olive oil.
  5. - Place the marinated chicken in the skillet or on the grill and cook each side for about 6-7 minutes until golden brown and cooked through (internal temperature should be 165°F/74°C).
  6. **Finish the Dish:** Just before removing from heat, squeeze fresh lime juice over the chicken for extra brightness.
  7. **Serve:** Garnish with freshly chopped cilantro and serve with your choice of side dishes, such as rice, vegetables, or a light salad.

Notes

**For a sweeter sauce:** Add a tablespoon of honey or brown sugar to the marinade for an extra touch of sweetness.
**For added spice:** If you prefer a spicier kick, include red pepper flakes, fresh chopped chilies, or a splash of sriracha in the marinade.
**Make ahead:** You can marinate the chicken overnight for a more intense flavor.
**Vegetarian Option:** Swap the chicken with tofu or tempeh for a delicious vegetarian version. Be sure to press the tofu to remove excess moisture before marinating.
